Soy Ginger Chicken Traybake
Written for four on a standard half-sheet pan. Scaling down is trivial; scaling up to six means a second tray rather than a fuller one.
Method
- Heat the oven to 425 degrees F. Whisk the soy sauce, honey, ginger, garlic, and rice vinegar in a bowl.
- Toss the sweet potato cubes with oil, salt, and pepper and spread them on the tray. Nestle the chicken thighs among them, skin side up, and brush the thighs with half the glaze.
- Roast 20 minutes, keeping everything in a single layer with space between pieces.
- Toss the broccoli with a little oil, add it to the tray, and brush the chicken with the rest of the glaze.
- Roast 15-18 minutes more, until the chicken reaches 175 degrees F at the thigh and the broccoli edges are charred.
- Rest 5 minutes, spoon the pan juices over everything, and finish with sesame seeds.
This is the recipe where crowding matters most. Four servings fit one half-sheet pan in a single layer; six do not, and forcing them on gives you pale, steamed chicken with soft skin. Use two trays and rotate them halfway through, and expect to add about 5 minutes because two trays lower the oven temperature. At two servings, use a quarter-sheet pan and check 5 minutes early.
Brush the glaze in two stages, not one. Honey and soy burn well before chicken thighs are cooked through, so the first coat seasons and the second - added with 15 minutes left - is the one that turns glossy without scorching.
