Scaled quantities are guidance

Each recipe is cooked and tested at one size, and the other two columns are scaled from it and checked for sense rather than independently tested end to end. Treat the scaled columns as reliable guidance, taste as you cook, and follow the scaling note on each recipe regarding pans, timings, and equipment.
